2 cups whole raw almonds
½ teaspoon salt
½ teaspoon cinnamon
2 Tablespoons honey
2 Tablespoons water
2 teaspoons vegetable oil
Spread the almonds out in a single layer in a shallow, ungreased baking pan. Bake at 350 degrees for 12-15 minutes, or until you can smell the almonds cooking. Set the roasted almonds aside.
Thoroughly mix the sugar, cinnamon, and salt in a bowl. Put a quarter of the mixture in a 9x13-inch baking dish and set both the baking dish and the rest of the mixture in the bowl aside.
In a large skillet, stir together the honey, water, and oil. Bring to a boil. Stir in the roasted almonds, turn the heat to medium, and continue to cook and stir until all the liquid has been absorbed by the almonds (about 5 minutes). Immediately transfer the almonds to the prepared 9x13-inch pan. Sprinkle the remaining sugar mixture over the almonds and toss until they are evenly coated. Spread the almonds back out onto the baking sheet you used to roast them and cool completely. (Stir occasionally so that they don’t stick together.) When almonds are completely cooled, store them in an airtight container or plastic bag.
